Preparation
- Prepare the starter: mix 1 tablespoon of flour, yeast, sugar, and 50 ml of lukewarm water. Let it sit for 10 minutes.
- In a bowl, combine the remaining flour, 125 ml of water, 125 g of yogurt, salt, butter, and the proofed starter. Knead into a smooth dough, cover, and let rise for one hour.
- In the meantime, prepare the filling: sauté the chopped onion, garlic, and bell pepper in olive oil. Add the ground beef, spices (garam masala, salt, pepper), ketchup, and sriracha. Cook until the meat is done, then add the chopped parsley and set aside to cool.
- Prepare the garlic sauce: mix 100 g of yogurt, mayonnaise, a pressed clove of garlic, salt, pepper, and chopped chives.
- Divide the risen dough into 8 pieces, shape them into balls, and let them rest for 15 minutes.
- Roll out each ball of dough thinly, then add a portion of the filling, mozzarella, and a tablespoon of garlic sauce. Seal the edges tightly to form a pouch, then gently flatten it.
